Whole30 Deviled Eggs

I always love having hard-boiled eggs on hand. They’re super easy to make and are extremely versatile. You can grab them on the go for breakfast, add them to a salad for lunch, or just enjoy them as a post-gym snack. Eggs are also filled with all sorts of good-for-you nutrients, including 6g of protein (per 1 large egg), essential amino acids, and a range of vitamins. Because of this, eggs will leave you feeling fuller and more satisfied longer.

I, personally, tend to eat a lot of hard-boiled eggs, which on their own can get a bit boring after awhile.

Enter deviled eggs; a great alternative to your normal hard-boiled option and for me, more satisfying then egg salad without the bread. While there are a ton of different ways you could make these bad boys, I’m all about keeping it simple and easy. You can make these as an appetizer, a snack, or in my case, this mornings breakfast.

If you already have hard-boiled eggs and Whole30 compliant mayo on hand, these take less than 10 minutes to throw together, if not, you can still do it in under 30.

To hard-boil my eggs, I bring a small pot of water to a rolling boil, gently place my eggs in the water and let it come back up to a boil. Once boiling again, I set a timer for 12 minutes. After the timer is done, I transfer the eggs into a bowl of ice water for 5 minutes (which helps make them easily peel-able) and voila! a super easy and fail-proof way to hard-boil your eggs.

If you don’t have store-bought or compliant Whole30 mayo on hand, you can easily make it while the eggs are cooking. I use the traditional Whole30 mayo recipe (with just 1 cup olive oil and 1/2 a lemon) which you can throw together in 3 minutes flat. The key to this recipe I find is being sure to use a light olive oil. I’ve tried extra virgin before, but it’s definitely too heavy and can overpower the taste.
